Portuguese Sweet Bread

This is a very rich bread, I found different recipes on the Internet and mixed them together.


Directions

  1. Dissolve yeast in warm water in large bowl.
  2. Stir in milk, 3/4 c. sugar, salt, 3 eggs, butter and 3 c. flour.
  3. Beat until smooth.
  4. Stir in enough remaining flour to make dough easy to handle.
  5. Turn dough onto lightly floured surface.
  6. Knead until smooth and elastic (5 min.)
  7. Place in greased bowl, turn greased side up.
  8. Cover - let rise in warm place until double (1 1/2 - 2 hours). Dough is ready if indentation remains when touched.
  9. Punch down dough.
  10. Divide into halves. Shape each half into a round, slightly flat loaf.
  11. Place each loaf in a greased 9" round layer pan.
  12. Cover - let rise until double (1 hour).
  13. Preheat oven to 350* F.
  14. Beat remaining egg slightly, brush over loaves.
  15. Sprinkle with 1 tsp. Sugar.
  16. Bake until loaves are golden brown (35-45 min.)

Cook time: 40 minutes @ 350* F
Yields: 2 loaves

Ingredients

  • 2 packages active dry yeast (4.5 tsp)
  • 1/2 c. warm water (105 - 110* F)
  • 1 c. lukewarm milk (scalded, then cooled)
  • 3/4 c. granulated sugar
  • 1 tsp. salt
  • 3 eggs
  • 1/2 c. butter, softened

  • 1 tsp. granulated sugar

This recipe doesn't list the total amount of flour, so I kept adding more until it seemed right (5-6 cups). The result tasted good but was bit dry.
