I got this recipe from a friend many years ago and have been perfecting it ever since.
Directions

1. Mix everything together in no particular order until everything is moist. Don't overbeat.
- 2. Pour into 2 greased loaf pans (8 x 4" makes taller loaves; 9 x 5" makes shorter ones).
- 3. Bake about one hour at 325°F. Loaves are done when a toothpick comes out clean.
- 4. Cool in pans for 15 minutes, then remove from pans.

Yields: Makes 2 loaves, 8 healthy slices per loaf
Ingredients

3 eggs
- 2 cups brown sugar OR 1 cup honey
- 3/4 cup oil
- 1/2 cup water
- 1/4-1/2 cup plain or vanilla yogurt
- 1 Tbsp vanilla extract
- 1 tsp salt (optional)
- 4 cups flour (I use whole wheat)
- 1-1/4 tsp baking soda
- 1/2 tsp baking powder
- 1 tsp cinnamon
- 1/2-1 cup chopped walnuts
- 1 handful of sunflower seeds
- 2 cups grated zucchini
